Have you seen the jobs report for March? Was waiting all day for someone on BMG to mention them or comment about them. It is almost like the unemployed and those who recently lost their jobs (huge spike in first time jobless claims this week) are the forgotten workers.
While it is true unemployment dropped to 7.6%, the reason is more disturbing. Labor participation is at Jimmy Carter, 1979 level numbers. “The number of people not in the labor force which in March soared by a massive 663,000 to a record 90 million Americans who are no longer even looking for work. Best way to describe the March jobs numbers would be what…..horrible, terrible, lame, unacceptable, disgusting, etc. Now the government is revising the January jobs numbers downward! March payroll numbers were a impotent 88,000. Most experts agree we need to be creating over 250,000 jobs each month for several years to get back to full employment. Bill Maher said it best, in 1968, there was 1 in 50 workers receiving disability. Today, it is 1-13. Bill Maher went on to say it isn’t 47% takers, more like 23% (not sure if I agree but it was a funny moment)
Fact is, Keystone XL would become America’s largest infrastructure project, creating directly and indirectly, 125,000 jobs. I repeat, 125,000 new private sector jobs. This is more jobs than what the entire country produced in March! I understand the concerns of the project but, in light of the fact people are struggling for work, many in the “Just Say No” environmental movement should show some mercy to the workers who would benefit from this project. Maybe I have a soft spot for those who get their fingernails dirty after a days work, but someone said, for every “no”, we need to say “yes”. I am waiting for just one “yes”, whether it is new oil exploration (ANWR) or nuclear plant construction.
While people rally around Deval Patrick and his tax increases to expand MBTA service (check out how the Greenbush Line loses millions a year), I hope we, someday, rally around the Americans who want work, but can’t find it. Unless you have a better idea for the 125,000 private sector jobs, let’s Go For The Gusto and build Keystone!

Green Energy Jobs and Jobs fixing US Infrastructure, make far more sense. Or you can just wait and you and your dogs can move North to Hudson Bay which will soon be as balmy as the Caribbean.

Lemon Cake
Hesser, New York Times Cookbook, pp. 781-782, but ultimately from Maida Haetter.
Mis-en-place
½ lb butter Set out to soften
4 eggs Set out to room temperature
¾ cup buttermilk Set out to room temperature
Two loaf pans:
8½ x 4½ x 2½
Flour
Additional butter Grease and flour the loaf pans
Parchment paper Line the bottoms with parchment
6 – 8 lemons Get ⅓ cup of zest
3 cups flour
½ tsp baking powder
½ tsp baking soda
1 tsp kosher salt Sift together
¼ cup lemon juice
(buttermilk)
1 tsp vanilla extract Combine
(eggs) Break into separate bowls.
Preheat the oven to 350°
Batter & Baking
(butter)
2 cups sugar Beat with paddle attachment for 5 minutes until light & fluffy
(eggs) At medium speed, add them one at a time
(zest) Add zest too
(flour mixture)
(buttermilk mixture) Add alternately beginning and ending with flour. (FBFBF)
Divide batter evenly. Spread into two cake pans. Smooth tops.
Bake 45-60 minutes until toothpick is clean.
Syrup (meanwhile)
½ cup sugar
½ cup lemon juice Combine in small saucepan
Cook over low heat stirring until sugar dissolves
Remove from heat
Cooling
Cool cakes for 10 minutes
Remove parchment
Invert onto rack over tray
(syrup) Spoon syrup over cakes
Allow to cool completely
Glazing
2 cups confectioners’ sugar
3½ Tb lemon juice Combine in bowl.
Whisk until smooth
Pour over cakes, allowing it to dribble down the sides

Unusual Ingredients
Roasted Spices
3 Tb ground coriander
1 Tb ground cumin
1 Tb desiccated unsweetened coconut Heat small iron skillet over medium flame
Dry roast ingredients at left, tossing with spoon, 2-3 minutes until spices turn dark brown
Set aside
Paste
4 medium onions Chop coarsely
5 cloves garlic Peel & chop coarsely
Ginger 1½ in by 1 in Peel & chop coarsely
1 large canned tomato
1 tsp turmeric
(the above) Place everything in the blender
Blend at high speed until a smooth paste
Meat and Spices
3 lb boneless lamb shoulder Cut into 1-inch cubes
Dry
5 whole cardamom pods
6 whole cloves
7 whole black peppercorns
2 bay leaves
1 2-inch cinnamon stick
2+ dried hot red peppers Collect the ingredients at left
4 Tb oil Heat over medium flame
Add measured spices. When peppercorns begin to expand and red peppers turn dark, put in a few pieces of meat at a time
Increase heat. Brown meat on all sides. As each batch browns, move it to a side plate
With a slotted spoon, move the whole spices to the side plate too.
Sauce
2 Tb oil With flame on medium high, heat oil.
(The paste) Add the paste from the blender, averting face for safety.
Stir until paste starts to stick to bottom of the pan.
Some water Lower heat.
Stir continuously.
Sprinkle water now and again to prevent scorching.
(Roasted spices) Add the roasted spices.
Cook another 5 minutes.
1 Tb yogurt Stir in the yogurt a little at a time to prevent scorching
Assembly
(The meat)
2 tsp salt
Water Add the meat, salt, and enough water to barely cover the lamb.
Bring to a boil
Cover. Simmer about 1 hour.
1 tsp garam masala Lift cover. Sprinkle garam masala.
Cook another 5 minutes

Ingredients
3/4 cup all-purpose flour
2 teaspoons coarse salt
1/2 teaspoon freshly ground pepper
4 boneless skinless chicken breast halves (about 5 ounces each), butterflied
3 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
10 ounces white button mushrooms, sliced
2 cups sweet Marsala wine
1 clove garlic, finely minced
3 tablespoons freshly squeezed lemon juice (of 1 lemon)
2 tablespoons unsalted butter
2 tablespoons finely chopped parsley
Directions
Combine flour, salt, and pepper in a large shallow dish; set aside. Heat a large skillet over medium-high heat until very hot. Dredge chicken in seasoned flour, tapping off excess; set aside. Add oil to skillet. When oil is shimmering, add chicken, and cook until lightly browned, about 3 minutes. Turn over, and cook 3 minutes more. Remove chicken to a plate; set aside and keep warm.
Heat 2 tablespoons butter in same skillet. Add mushrooms, and cook, stirring occasionally, until mushrooms are golden brown and all the released liquid has evaporated, 5 to 7 minutes.
Remove skillet from heat, and add wine. Return skillet to heat, scraping up any brown bits with a wooden spoon. Add garlic, lemon juice, remaining 2 tablespoons butter, and parsley. Cook for 2 minutes until reduced and slightly thickened. Taste and adjust for seasoning. Pour sauce over chicken and sprinkle with parsley. Serve immediately
